Kombucha is no longer a secret; this slow-fermented tea drink is rapidly becoming a favourite among islanders in Guernsey and Jersey, thanks to kombucha enthusiast Kate Attieh.

“Kombucha has a unique flavour profile that’s unlike anything you’ve ever tasted!” she says.

Kate's kombucha journey began in 2017 at the Test Kitchen in Cape Town, where she discovered this delicious, grown-up, non-alcoholic drink—refreshing, complex, and free from any unwelcome side effects.

 

 

From Cape Town to Guernsey: Kate’s Story

Kate’s roots span continents—growing up in South Africa with Lebanese and Greek heritage, she later moved to London in the 1980s, where she met her partner. Together, they settled in Guernsey in 1994.

“My passion has always been food,” Kate shares. “Growing up, my mum, an incredible cook, hosted big Sunday lunches. Saturdays were dedicated to prepping and cooking from scratch, and that tradition stayed with me.”

Kate's dedication to healthy, high-quality food inspired her venture into brewing kombucha. In 2018, this passion culminated in founding KTea, sharing her love for this extraordinary drink with others.

What is Kombucha?

Kombucha starts simply: tea, sugar, and water. But the magic happens through a special ingredient: the SCOBY—a symbiotic culture of bacteria and yeast. This living organism transforms the sweet tea into a drink brimming with beneficial bacteria, organic acids, and a one-of-a-kind flavour.

At KTea, brewing is a craft. No concentrates, no forced carbonation, and no shortcuts! Only the finest ingredients - organic, ethically sourced tea leaves and botanicals, raw cane sugar, and filtered water—are used. Each batch is slow-brewed and naturally carbonated, delivering an effervescent beverage that’s low in sugar and caffeine and as good for your gut as it is delicious.

From Small Beginnings to Big Dreams

What began as a one-woman operation in a wine cellar has blossomed into a thriving team of five full-time female brewers. With a modern brewery capable of producing over 750,000 bottles annually, KTea has become a cornerstone of Guernsey's non-alcoholic drinks scene.

The KTea team is proud to be part of a centuries-old tradition, twice fermented and all-natural - with kombucha cultures dating back to 200 BC in China making their way to Guernsey in 2018

From January 2025, KTea will become available in the UK.

Sustainability and Beliefs

The Team at KTea believe in diversity—not just in gut health but also in soil health. That’s why they donate their organic waste, including spent tea leaves and surplus SCOBYs, to Guernsey’s Soil Farm. By enriching the soil, nothing goes to waste.

KTea is vegan, gluten-free, low in sugar and caffeine, and free from additives and preservatives. Their kombucha is alive and should always be refrigerated to maintain its quality and freshness. (and to arrest the fermentation process)
