Tuna pasta salad
You’ve probably made tuna mayo a thousand times before, but here we’ve elevated it into an easy pack-ahead lunch.

Ingredients
250g Honest Value penne 145g can Honest Value tuna flakes in brine, drained 4 tbsp reduced fat mayonnaise 1 tbsp Coop balsamic vinegar 70g Coop sundried tomatoes, roughly chopped, plus 1 tbsp oil from the jar 1 shallot, finely chopped 70g Coop pitted black olives, roughly chopped 1 tbsp capers 50g Coop wild rocket;
Method
1. Cook the pasta according to the pack instructions 2. While the pasta is cooking, make the dressing: In a large bowl mix together the mayonnaise, balsamic and oil from the sundried tomatoes, plus 2 tbsp of the pasta cooking water 3. Season well to taste 4. When the pasta is cooked, drain and refresh under cold water 5. Transfer to the bowl with the dressing 6. Add the shallot, olives, capers, sundried tomatoes, tuna and rocket 7. Gently toss until everything is coated with the dressing 8. Divide between serving plates or lunchboxes and season with freshly ground black pepper
