Take time out of a busy weekend to make this delicious but easy bake, starring Co-op British apples
Ingredients
175g Co-op plain flour, plus extra for dusting
75g Co-op unsalted butter, chilled, cut into small cubes
50g Co-op Irresistible Somerset vintage Cheddar, grated
1 Co-op British egg, yolk and white separated
20g white breadcrumbs
3 Co-op British apples, peeled, cored and sliced
40g caster sugar
2 tsp lemon juice;
Method
Preheat the oven to 200°C/fan 180°C/Gas 6
Put the flour and butter in a bowl with a pinch of salt and rub together with your fingertips until the mixture resembles breadcrumbs
Stir in the cheese
Mix the egg yolk with 3 tbsp cold water, then stir into the mixture to make a stiff but not sticky dough
Add more water if needed, then shape into a circle about 2cm thick
Lightly dust your work surface with flour and roll the pastry out into a 25cm round
Place on a baking tray lined with greaseproof paper
Sprinkle the breadcrumbs in the middle of the pastry, leaving a 4cm border around the edge
Toss the apple in the sugar and lemon juice until all the slices are coated, then pile on top of the breadcrumbs
Roughly fold the edges of the pastry up and over the fruit, overlapping slightly as you go
Brush the pastry with the egg white and bake for about 35 mins, until the pastry is crisp and the apple is tender
