Asian-style beef stir fry
Ingredients
1 tbsp Coop vegetable oil
500g Coop 5% fat British beef mince
280g jar Coop chargrilled peppers, drained and roughly chopped
290g can Coop garden peas, drained
400g can Coop green beans, drained
½ tsp chilli flakes
4 tbsp Coop light soy sauce
1½ tbsp Coop Fairtrade clear honey
1 tbsp Coop lemon juice
2 tbsp Coop toasted sesame oil
250g Coop medium egg noodles
Method
1. Heat a large frying pan over a high heat
2. Add the oil, then the mince
3. Stir fry for 5-6 mins, until crisp and beginning to turn golden
4. Add the peppers, peas, green beans and chilli flakes, then stir fry for 2 mins
5. Pour in the soy, honey, lemon juice and sesame oil, and continue to cook for 3-4 mins
6. Meanwhile, cook the noodles to the pack instructions
7. Drain and serve with the stir fry beef and veg
