Bakewell fool
Try this lighter pud featuring the classic flavours of a Bakewell tart

Ingredients

8 Coop British plums, halved and stoned
30g icing sugar
75ml orange juice
1 tsp almond extract
150g Coop fat free Greek style yogurt
50g rolled oats
50g ground almonds

Method

Preheat the oven to 180°C/fan 160°C/Gas 4

Put the plums in a small ovenproof dish

Mix the icing sugar, orange juice and 1/2 tsp almond extract, and spoon over the plums

Bake for 20 mins, then remove and leave to cool for 10 mins

Meanwhile, mix together the yogurt, oats, ground almonds and another 1/2 tsp almond extract

Add a layer of the yogurt mix to the bottom of 4 glasses, then add a layer of the baked plums

Repeat until you have 3 layers of each

Drizzle over any remaining juices from the plums and serve
