Mediterranean-style vegetable stew
Packed with veg and ready in just 30 mins, this stew makes a great midweek dinner

Ingredients

325g Coop Mediterranean style vegetable roasting tray
1 tbsp oil
1 aubergine, chopped
1 garlic clove, chopped
400g can Coop Honest Value chopped tomatoes
400g can Coop butter beans

Method

1. Roast 325g Mediterranean style vegetable roasting tray according to the pack instructions

2. Meanwhile, heat 1 tbsp oil from your store cupboard in a frying pan over a medium-high heat

3. Cook 1 aubergine, chopped, for 10 mins, until golden

4. Add 1 garlic clove, chopped, and cook for 1 minute, then pour in a 400g can chopped tomatoes and 200ml water

5. Drain a 400g can butter beans, then gently mash half

6. Stir all the beans into the pan, then simmer, partially covered, for 10 mins

7. Once the roasted veg is cooked, add it to the pan and cook for 5 mins more. Season to taste and serve
