Jersey Wonders
An old wives’ tale of explains that these treats could only be cooked as the tide went out, or they won't rise!

Ingredients

6 eggs
225g caster sugar
110g butter
680g self-raising flour

Method

1. Sieve the flour and sugar into a bowl

2. Chop the butter into small cubes and rub this into the flour and sugar

3. Whisk the eggs and add to make a light dough

4. Flour your hands and make small to medium ball sized shapes from the dough.

5. Roll out each of the balls into rectangles – 5cm x 10cm

6. Using a sharp knife, cut a slit in the centre of each rectangle and twist the top end through the slit

7. In a large pan, heat oil so this is boiling hot

8. Drop four wonders at a time into the pan and cook for 2 minutes each side until golden

9. Drain on kitchen paper then eat when you're ready!
