Using our fave ready-to-eat Coop products, we've created an Italian-style antipasti salad

Ingredients

60g pack Coop wild rocket 120g pack Coop sun soaked tomatoes, drained, 1 tsp oil reserved 120g pack Coop chargrilled artichokes with a herb dressing, drained 100g Coop chargrilled peppers in oil, torn 140g pack Coop Irresistible Italian antipasto selection 150g Coop pitted queen green olives with garlic 2 tsp Coop balsamic vinegar of Modena ½ x 25g pack basil, leaves picked Ciabatta, to serve;

Method

1. Scatter the rocket over the base of a large platter 2. Layer the sun soaked tomatoes, artichokes, peppers, antipasto selection and olives over the rocket, creating different sections that gently overlap 3. Drizzle with the sun soaked tomato oil and balsamic, then top with the basil leaves 4. Serve with the ciabatta on the side
