Strawberry and mint sorbet
Overripe strawberries work best in this delicious dessert

Ingredients
200g Coop British strawberries, hulled and halved
75g caster sugar
Juice of 1/2 lemon
6 fresh mint leaves
Method
1. Put 200g Co-op British strawberries, hulled and halved, 75g caster sugar, juice of 1/2 lemon and 6 fresh mint leaves, finely chopped, or 1/2 tsp dried, in a blender and whizz until smooth
2. Pour into a freezable container and freeze for 3 hours. After each hour of freezing, mash with a fork to break up the ice crystals and return to the freezer
3. Remove from freezer and place in the fridge for 10 mins to soften before serving
