Ingredients

900ml tub Co-op vanilla ice cream 150g condensed milk caramel 1 x 200g pack Co-op Irresistible triple chocolate cookies 1 x 200g pack Co-op Irresistible ginger & dark chocolate cookies;

Method

1. Thaw the ice cream until you can easily stir a spoon through it, then transfer to a bowl 2. Put quarter of the ice cream back in the tub, then swirl through quarter of the caramel 3. Repeat with the rest of the ice cream and caramel, then return to the freezer to set (This works better if you do it in batches, rather than in one go) 4. For each sandwich, scoop two balls of ice cream onto a cookie and top with another cookie, matching chocolate with chocolate and ginger with ginger 5. Serve immediately
